Kashmiri Red Chilli (Lal Mirchi)

Kashmiri red chilli, or Lal Mirchi, is valued for the vivid red color it brings to food and its rounded chilli flavor. Some recipes refer to a similar color-rich chilli powder as Deggi Mirch; packaged Deggi Mirch can also be a blend. It is commonly used in gravies, marinades, and traditional Kashmiri cooking.

Three ways to enjoy saffron

A few threads steeped in warm water or milk bring color and aroma to these family favorites. Measurements are written for home kitchens; adjust sweetness to taste.

Kashmiri kehwa

Fragrant green tea with saffron, cardamom, cinnamon, and almonds.

Ingredients & method

Ingredients

  • 2 cups water
  • 1 teaspoon green tea leaves
  • 4–6 saffron threads
  • 2 lightly crushed green cardamom pods
  • 1 small cinnamon stick
  • 1 tablespoon slivered almonds
  • Honey or sugar, to taste

Method

  1. Simmer water, cardamom, and cinnamon for 5 minutes.
  2. Turn off the heat. Add tea and saffron; cover and steep for 3–4 minutes.
  3. Strain into cups. Add almonds and sweeten to taste.

Kashmiri saffron firni

A chilled, gently set rice pudding with saffron and cardamom.

  • ¼ cup rice, soaked 30 minutes and drained
  • 3 cups whole milk
  • 8–10 saffron threads, steeped in 2 tablespoons warm milk
  • ¼ cup sugar, or to taste
  • ¼ teaspoon ground cardamom
  • Chopped pistachios or almonds to finish

Method

  1. Pulse the soaked rice with a little milk to make a coarse paste.
  2. Bring the remaining milk to a gentle simmer. Stir in the rice paste and cook, stirring often, for 15–20 minutes until thick.
  3. Mix in sugar, saffron milk, and cardamom. Cook 2 more minutes, then pour into bowls.
  4. Chill until set and finish with nuts.

Frozen dessert · 4 servings · 25 minutes plus freezing

Kashmiri saffron kulfi falooda

Ingredients

  • 2 cups whole milk
  • ½ cup sweetened condensed milk
  • 10–12 saffron threads, steeped in 2 tablespoons warm milk
  • ¼ teaspoon ground cardamom
  • ½ cup cooked falooda vermicelli
  • 2 tablespoons rose syrup, or to taste
  • Chopped pistachios to finish

Method

  1. Simmer whole milk for 10–15 minutes until slightly reduced, stirring to prevent scorching.
  2. Stir in condensed milk, saffron milk, and cardamom. Cool, pour into molds, and freeze until firm, at least 6 hours.
  3. Divide cooked, cooled vermicelli between glasses. Add sliced kulfi, a drizzle of rose syrup, and pistachios.

Contains milk and, where used, tree nuts. Check individual ingredient labels for your dietary needs.

What has saffron research found?

Clinical studies have explored measured saffron extracts, especially for mood and sleep. In one randomized trial of 202 adults with low mood, a daily 28 mg extract improved one depression symptom score more than placebo after 12 weeks; other measured outcomes did not clearly differ. A review of 21 trials found improvement on some mood and sleep scales, but not on others.

What this means for the kitchen: these studies do not establish that saffron used in kehwa, firni, or kulfi has the same effects. Enjoy saffron for its flavor, color, and culinary heritage. It is not a treatment or substitute for medical care.
